Football Foods.

Mooch’s dad was quite the football star and Mel wrote her 4th grade paper on LT (don’t tell Mooch she was once a Giants fan). It’s safe to say that we are both a fan of football… and football foods.

 

Here’s a Move Approved crockpot (can you say time blocking?) chili recipe we tweaked from the medical medium.

 

For Chili:

2-3 cans of black beans or kidney beans

1 tablespoon coconut oil

4 cups diced onion

4 garlic cloves, minced

2 cups diced carrots

2 cups diced celery

2 cups diced mushrooms

2 cups diced red bell pepper

2 teaspoons each cumin, poultry seasoning, garlic powder, and chili powder

1 teaspoon sea salt

1 teaspoon red pepper flakes (optional)

2 tablespoons tomato paste

2 cups diced tomatoes

1 avocado, diced

1 jalapeno, minced

1/4 cup minced cilantro

 

For Cashew “Sour Cream”

 

1 cup raw cashews

1/2 lemon, juiced

1/2 date, peeled, pitted

1 garlic clove

1/2 cup water

 

In the crockpot, put 1 tablespoon coconut oil and let heat; add the onions and garlic. Do a light saute until the onions are translucent. Add the carrots, celery, mushrooms, bell pepper, spices, sea salt, and red pepper flakes, if using. Add beans, tomato paste, and tomatoes, stirring until well combined. Let sit in the crockpot for 4 hours on high, or 8 on low. 

 

For the “sour cream,” blend all ingredients until smooth, adding 1/2 cup water slowly (just enough to keep things moving). Serve chili topped with cashew “sour cream,” avocado, jalapeno, and cilantro.
